I love to see the weekly themes that Ceri and Laura come up with – they always get me inspired to get in the kitchen and cook some healthy, delicious recipes. I was so excited when I saw that the theme for this week is Baking Week. How perfect is it for this time of year? With all the rain of March and April, it’s so nice to spend the weekend in the kitchen baking up some comforting treats. Plus, it’s a great indoor activity for kids. I used to love baking chocolate chip cookies with my Mum when I was growing up. Here are five baking recipes to keep you busy in the kitchen during Spring!

I mentioned that baking chocolate chip cookies is a favourite memory of mine, so naturally, these Almond Butter Chocolate Chip Cookies are first on my “to-bake” list.

Ever since this Chocolate Coconut Bread Pudding was posted, I can’t get it out of my head.

Oreos are my guilty pleasure. I love that I can make them at home with this recipe for Homemade Oreos.

I had this Maple Cornbread a few months ago and it was so good.

We make a lot of Banana Bread in my house, but I think this Coconut Loaf is going to be a new favourite.
