Roasted Chickpea Chicken Tray Bake

On top of finishing up a few big projects for this year and getting details in place for one that starts in early 2016, I have to get my act together for some holiday entertaining we’re doing over the next week. But why am I telling you this? Do you even have time to read this post? No, you don’t. But you need dinner, right? Here’s a lightening fast one for you. By the time your oven gets up to the right temperature all of your prep will be done. It’s a Moroccan-flavoured, tray bake dinner. It’s the teensiest bit spicy but the cool yogurt dressing balances everything out – even for kids, I promise.  Okay, go!

Roasted Chickpea Chicken

Total Time: 30 minutes

serves 4

Roasted Chickpea Chicken

Ingredients

  • 5 Tbsp olive oil
  • 4 cloves garlic, minced finely
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tsp salt
  • pinch pepper
  • pinch of red pepper flakes
  • 1 cup Greek yogurt
  • 6 boneless, skinless chicken thighs
  • 2 cups cherry tomatoes
  • 1 x 15 ounce can chickpeas, rinsed
  • 1 cup cilantro

Method

Preheat oven to 450 degrees.

Whisk oil, garlic and spices together. Take 1 tablespoon of the mixture, stir it into the yogurt. Place the yogurt in the fridge.

In a large bowl, toss the chicken, tomatoes, chickpeas and cilantro with the rest of the oil and spice mixture. Arrange in a single layer on a rimmed baking sheet.

Bake for 20 to 25 minutes.

Serve with a dollop of the spiced yogurt.

    I tried this recipe and really liked it, approx. 30 min prep time. I would like to get a calorie, fat, sodium type breakdown for this and other recipes that you post. It would be really helpful to have this at the end of each one. Being health conscious, I normally decide if I will take the time to prepare something new based on this information.
