Meal Plan April 11, 2016

Okay, let’s get right to it! You’ve got birthday parties to drop a kid off at, soccer games to shiver through and by God you’ve got groceries to buy. This week’s meal plan is pretty sweet, if I do say so myself. If you’re a Sunday batch cooker (and if you’re not, why not?!), then you could whip up the soup and curry and really make this week much more chill. We’ll be starting with a meatless Monday curry. It’s a delicious chickpea and cauliflower combo. You will for sure have leftovers for lunches. Then, for my pal Lisa, whose kids have decided that every Tuesday must now be a Taco Tuesday, we’ve got some easy beef tacos. On Wednesday it’s a one-pot pasta because one pot, people! There’s an easy, cheesy broccoli soup on Thursday and we’ll end the week with the recipe that I will not stop yelling about until you make it. Remember to toss everything in the slow cooker on Friday morning and then you’ll come home to dinner.

  • 1 (15-ounce) can of chickpeas
  • 1 (15-ounce) can of coconut milk
  • 1 medium head of cauliflower

  • brown rice

  • 1 large sweet potato
  • olive oil

  • 2 lb. (900 g) organic lean ground beef

  • 1/2 cup (125 ml) shaved Monterey jack cheese

  • 8 corn tortillas

  • One-Skillet Tomato Basil Chicken Pasta

  • 1 lb boneless, skinless chicken breast
  • 4 cloves of garlic
  • 1 28-ounce can of San Marzano tomatoes
  • 1 1/2 cups low-sodium chicken broth
  • 2 cups spelt penne pasta
  • 1 cup freshly shaved Parmesan cheese
  • 1 cup fresh basil leaves

  • 1 1/2 cups milk

  • 1 5 oz (147) ml tube of tomato paste
  • curry powder or paste
  • 1 14 oz (400 ml) coconut milk
  • 1/2 cup (125 ml) Greek yogurt
  • 1/4 cup (60 ml) milk
  • coconut oil
  • small handful of cilantro for garnish
