The Top Five Reasons Karine Loves Pasta

  2. You can make enough to for lunch the next day.
  3. Whether you prefer gluten-free, whole wheat or good ol’ semolina, there’s a variety out there to please just about everyone.
  4. I can usually prepare the entire meal within 15 minutes.
  5. It practically guarantee’s no one will complain about what’s for dinner.

You really can’t go wrong with pasta in my house. All of my kids love it and that makes it my go-to when I have foolishly skipped SPC’s weekly meal plan and I need a last minute meal. And it doesn’t have to be super-heavy: Spring is the perfect time to make light, healthy pasta dishes loaded with fresh veggies. Ceri included their new (genius) Nicoise Pasta in this week’s meal plan, and I am going to have all of these on back-up over the next few weeks.
