You may think we’re throwing a curve ball into this week’s plan by including a slow cooker dinner but listen up! Summer is actually the best time to use our favourite appliance. It keeps the kitchen cooler than the stove or oven and that’s pretty much my top priority once we’re into July. Meal Plan June 20, 2016

Ingredients

  • Slow Cooker Butter Chicken
  • 2 lb (900 g) chicken thighs or breasts
  • 1 onion
  • 3 or 4 cloves of garlic
  • 1 tsp (5 ml)ginger
  • 1 5 oz (147) ml tube of tomato paste
  • 1 heaping Tbsp (about 15 ml) curry
  • 1 14 oz (400 ml) coconut milk
  • 1/2 cup (125 ml) Greek yogurt
  • 1/4 cup (60 ml) milk
  • 2 Tbsp (30 ml) coconut oil
  • small handful of cilantro for garnish
  • Salmon Dinner Salad
  • 8 small red pota­toes
  • 1 cup frozen corn
  • 1 head of ten­der let­tuce (Boston or but­ter)
  • 1 avo­cado
  • 6 or 7 plum toma­toes
  • 2 filets of salmon
  • olive oil
  • 1/2 lemon's worth of juice
  • salt and pepper
  • 1/2 cup yogurt
  • 1/4 cup fresh dill
  • 1/2 lemon's worth of juice
  • 1 Tbsp honey
  • Spinach and Sundried Tomato Penne
  • 1 lb (450 g) penne pasta
  • 4 cups (1 L) baby spinach
  • ¼ cup (60 ml) diced sundried tomatoes (not packed in oil)
  • ¼ cup (60 ml) olive oil
  • 2 tsp (10 ml) Umami paste
  • 1 large clove garlic
  • 1 cup (250 ml) shaved asiago cheese, plus 1 Tbsp (15 ml) for garnish
  • 1 handful of basil leaves (about 20), chiffonade
  • Cauliflower Cous Cous
  • 1 sweet potato
  • 2 cups Brussels sprouts
  • 1 tbsp olive oil plus two teaspoons
  • 1 head cauliflower
  • 1 tbsp salt, plus 2 teaspoons
  • 1/2 teaspoon cumin
  • 1/4 cup crumbled feta
  • 1 pat of butter
  • 4 eggs
  • Breakfast Pizza
  • 2 pitas
  • 1 cup passata (or tomato or pizza sauce)
  • 1 1/2 - to 2 cups mozzarella
  • 1/4 cup crisply fried bacon
  • few leaves of basil
  • 2 eggs

    Great job! I love your recipes, I have not made anything that I didn’t like – Just wondering, why don’t you give the calorie amount for each meal?

      Hi Nathalie,
      Thank you so much! As for calories, it’s really not our focus with the recipes. We’re really interested in healthy and delicious and everyone’s needs are so different. I hope that makes sense!
