Think Eggs Now

When Spring finally acts like, well, itself (hello, sunshine and warmer days!), you can’t help but to think about lightening up your meals. I don’t know about your family but I get serious eye roll if I try to serve one of the hearty meals we lived off of all Winter (sorry, chili) so I like to lighten things up. And one of the ways I get back to warmer weather cooking is by turning to my good friend the egg. At SPC we speak the gospel of always having eggs in your refrigerator because they’re a sure-fire shortcut to any meal but, this time of year, they seem even more necessary. And I’m not jus saying that because those who celebrate Easter are dyeing, decorating and hiding them all over their home. Embrace eggs because they truly are, well you know what they say, incredible.

    Thank you for all the wonderful egg recipes!
    I truly do believe that eggs are an essential to have in the refrigerator. They can pull together any meal and are essential for making cookies! Its a shame that your chili has to go though, I know I’m going to miss the soups I typically make during the winter months.
    What is your favorite ways to cook eggs? And -this may be a silly question- do you pay attention the cholesterol levels that your family eats through eggs? What guidelines do you follow in regards to that?
