Meal Plan May 9, 2016

Hey Meal Planners, I’m back! The bulk of the photography for our next cook book is done so I’m back in the kitchen with you. I won’t lie, being on set is the most fun and taking home food you didn’t have to cook yourself (thanks food stylist extraordinaire, David Grenier!) is like winning the lottery. But I’m excited to be back on track and I think this week’s plan is pretty sweet. Everything here is really quick so you don’t need to spend time on the weekend getting anything ready.

We’re starting the week with pancakes and who can complain about that? I love breakfast for dinner and these corn pancakes are the bomb. Tuesday’s Salmon Parcels are great because you can switch up most of the elements to suit your family. Any light fish will work, and most veggies, so go to town. Spaghetti with Pancetta and Spinach is a pantry dinner you’ll be wanting to add to your regular rotation. Thursday’s dinner of Caprese Chicken Skillet is going to deliver a whole meal and only dirty one pan. And head into the weekend with an ooey-gooey, garlic-y grilled cheese. Throw some carrot sticks on the plate and call it a meal.

Ingredients

  • Corn Pancakes
  • 2 eggs
  • 2 cups buttermilk
  • vegetable oil
  • flour
  • baking soda
  • baking powder
  • salt
  • sugar
  • corn meal
  • frozen corn
  • 4 scallions
  • Salmon Parcels
  • 2 salmon filets
  • 1/2 carrot
  • 1 red or yellow pepper
  • 1 baby bok choy
  • sesame oil
  • rice vinegar
  • low sodium soy sauce
  • ginger
  • Caprese Chicken Skillet
  • 6 large boneless, skinless chicken thighs
  • olive oil
  • salt and pepper
  • 3/4 pound mini red, white and purple potatoes
  • 6-8 cherry tomatoes
  • 1/4 cup bocconcini
  • 8-10 large basil leaves
  • Grilled Cheese with Garlic Apples
  • butter
  • 1 clove garlic
  • 1 Gala apple
  • 4 pieces of multi-grain bread
  • 1/2 cup aged cheddar
