
NYE Appetizers including our Favorite Vegetarian Versions
Over the last year, dinner has become double the trouble after my daughter Scarlett went vegetarian. I’m super proud of her decision, and have been making an effort to follow in her footsteps. However, I’ve taken a less cold turkey approach by reducing my meat intake by 50%, and I think 2021 will be the year that I finally eliminate meat from my diet.
It’s no longer just the “what’s for dinner” but the “what do I buy” at the grocery store that plagues me. I always have to ask if I have enough for Scarlett to create complete meals. Does she have a suitable “main” if we’re having burgers with the salad and roasted Brussels sprouts? It’s definitely easier that Scarlett is an older kid since she cooks half her meals and does most of the meal planning and shopping with me.
If your household is like ours and split down the kitchen, then you’ll love this list of NYE nibbles including vegetarian options galore. (Even if you’re not vegetarian, I bet my 3-ply, filtered face mask you’ll still find lots you’ll love.) You’ll notice that a lot of them have a veggie version and I’ve also thrown in a few bite-size desserts. Normally, if we find ourselves home for NYE, and after preparing a massive dinner for Christmas, we love to graze on a bunch of appetizers. Since we’re definitely bringing in 2021 at home this year, a snack buffet is the best way to tackle the celebration–Way less prep, work and clean up.
