Chocolate, Pretzel and Peanut Microwave Cookie

  • 2 tbsp unsalted butter, melted
  • 1 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1/4 tsp vanilla extract
  • 3 tbsps all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp cornstarch
  • pinch salt
  • 1 tsp peanuts
  • 2 tbsps dark chocolate chunks or chips
  • 1 pretzel, broken


  • In a small bowl or mug, whisk butter and sugars. Stir in vanilla extract.
  • Stir in the flour, baking soda, cornstarch and salt. Mix until blended. Stir in peanuts, chocolate and pretzel.
  • Place in the refrigerator for 10 minutes. Remove from the mug and form into a ball. Place on a microwavable plate. Lightly flatten with the back of a tablespoon.
  • Microwave the cookie for 30 seconds. Turn cookie. Microwave another 20 seconds. If needed, microwave for a final 10-20 seconds until edges crack a bit and center is cooked. (Everyone's microwave is different so check cookie after each cooking increment. The dough will get lighter in color when it is cooked.) The entire cookie will be too soft to lift, so allow it to sit for 5 minutes on the plate in the refrigerator to cool. Use a spatula to lift it from the plate and enjoy.


Please don't skip the refrigeration step. It's important for the cookie set up, especially since the recipe uses melted butter. Otherwise, you'll have a plate of mush. Also, be sure to let it cool in the refrigerator after microwaving since it will be too soft to lift from the plate. You don't want it to fall apart.
