Roundup: Fast Breakfast Ideas

This is no word of a lie: Scarlett likes to eat two breakfasts. I’m sure there are others out there like her. The second she pops her head off the pillow she wants something to throw in her mouth. It usually means I have a lot of cleaned grapes and berries at the ready to just throw in a bowl. However, after she’s dressed she’s ready for “The Meal.” In other words, she’s looking for a full breakfast. On weekday mornings that means I need to have a rotation of meals that can get on a plate fast and easy (at best) or can be eaten in the car (at worst). Scrambled eggs? Yes. Yogurt and fruit? Yes. But I need others, and chances are, you do too…

Sweet Potato French Toast Sticks is great if you have some leftover mashed sweet potato from the night before.

Cranberry Granola Balls are great for the morning rush. Make them the night before and have them for on the fly. They’re also great crushed into yogurt or cottage cheese.

Apricot-hempseed Sticky Bars are very sticky but super good for you.

Crispy Bars with Blueberries and Raisins if you can squeak these out in advance, you’ll have enough for a week’s worth of breakfasts or snacks.
