Fried Noodles

You may have spent yesterday lusting over Melvie’s spring rolls. (Maybe that was just me?!) But we’re back today to give you one more homemade dish from my friend Alexa’s nanny. This dish is a true crowd-pleaser. Warm and satisfying, it’s a great way to feed a big group. It’s also the exact same recipe as the spring roll, all you need to do is add the noodles. And, like the spring rolls, its a fun dish to eat, especially if you add some chopsticks.

Fried Noodles

Ingredients

  • 1 lb. ground pork or chicken
  • 3 Tbsp soy sauce, divided
  • 1 Tbsp corn starch
  • 2 Tbsp canola oil, divided
  • 1 tsp sugar
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 package of noodles
  • 1 carrot, grated
  • 1 cup bean sprouts
  • 11/2 cups chopped green beans
  • 1 Tbsp fish sauce
  • 1 tsp salt
  • 1 tsp pepper

Method

Marinate pork in 1 Tbsp soy sauce, corn starch, 1 Tbsp oil and sugar for 30 minutes.

In a large frying pan, heat remaining Tbsp oil over medium heat.

Add garlic and onion, lower heat and cook until translucent.

Add chopped meat to pan.

Cook meat thoroughly, about 5 minutes

Meanwhile, cook noodles in boiling water according to package directions. Drain and put aside.

Mix carrot, bean sprouts and green beans into meat mixture.

Toss and blend together then add remaining soy sauce and fish sauce as well as salt and pepper. Saute until vegetables cook, about 3 to 5 minutes. Then remove from heat.

Toss vegetables and all its liquid with noodles and serve.
