Broccoli, Rice and Cheese Casserole

Ingredients

  • 4 cups cooked jasmine rice
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 small yellow onion, diced
  • 4 cups broccoli florets
  • 1 15 oz can of cream of mushroom, celery or brocooli soup
  • 1 cup shaved cheddar cheese, divided
  • 2 tbsp panko or bread crumbs

Instructions

  • Grease a baking dish. Preheat oven to 350
  • Make rice according to package directions.
  • Heat oil in a large skillet over medium heat.
  • Add onions and cook for around 5 minutes or until softened.
  • Add garlic and cook for a minute until fragrant.
  • Mix in broccoli and cook for another 5 to 6 minutes until fork tender.
  • Stir in rice, soup and 1/2 cup of the cheese.
  • Add salt and pepper to taste.
  • Transfer rice mixture to prepared baking dish and sprinkle remaining 1/2 cup cheese and panko over top.
  • Bake until golden brown and bubbly, about 30 minutes.
