Last night I taught my teen nieces the benefits of a sheet pan dinner and how to make them at university. After a year of eating pasta, they needed inspiration and strategies for getting good food on their humble table. Maybe their menu wont include my Spiced Maple Sugar Salmon, but we talked about a lot of affordable options. We also chatted the golden rules of sheet pan suppers (below). About the only thing i love about social media is how the recipe videos have inspired teens to get into the kitchen. We parents have known the brilliance of sheet pans, but it’s fun to bring them to a new generation of cooks. I’m pretty sure I just made cereal at school. 🥄
🍽️ select a protein like poultry, beef, pork, fish or tofu
🍽️ pick vegetables and pile them on since they cook down significantly under high heat
🍽️ begin with the item with the longest cook time (here it was the potatoes) and layer on the other items
🍽️add flavour like fat (oh, hey butter!) herbs and spices

This is the #ChocolateCake of all Chocolate Cakes. It was featured in my segment last week on @morningshowca and the recipe was passed down to @jmacspeaks from his mom, Carolyn. It was originally is grandma Cartwright’s recipe. It’s impossibly moist and has the secret weapon of black coffee that enhances the chocolate flavor. Jeff was gracious enough to share it with all of us and I say share it far and wide. I like to think that every delicious cake made pays homage (in some small way) to his mom as well as his grandma, who both lovingly made this cake for their family. I can’t think of a better way to honor two great moms. Plus, why wouldn’t you make it? It’s the best damn chocolate cake I’ve ever had. Thank you Jeff and thank you Grandma Cartwright. ❤️

Grandma Cartwright’s Chocolate Cake
Written by Grandma C:
Preheat the oven to 350 and grease a bundt pan or springform pan. Combine in a mixer on medium speed for 2 minutes:
2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup cocoa
1 tsp baking powder
2 tsps baking soda
1/2 tsp salt
Add:
1 cup buttermilk
1 cup strong black coffee
2 eggs
1/2 cup vegetable oil
1 tsp vanilla extract

Pour into prepared pan and bake for 35-40 minutes. Cool on a wire rack. Frost with chocolate frosting.

These Lasagna Roll-Ups use a high protein spinach

These Lasagna Roll-Ups use a high protein spinach and cottage cheese filling, and they’re an easier way to enjoy the layered dish without all the work. My nonna just gave me side eye, but she’ll forgive me.

Lasagna Roll-Ups
Makes: 4-6 servings

1 jar of tomato sauce
1 box (13.25 oz) lasagne sheets, not even ready, cooked
2 cups fresh baby spinach
2 cups cottage cheese
1 cup grated Parmesan
1 egg
1/2 tsp salt
1 cup grated Fonina cheese, divided
1 cup grated mozzarella cheese
Parsley, for garnish

Method

Preheat the oven to 375. Cook your lasagna noodles according to package directions. Ladle a layer of sauce across the bottom of a 9’ x 13’ inch baking dish.

In a food processor, add spinach, cottage cheese, parmesan, egg and salt; process until you have a creamy mixture.

Create a rolling station by laying your noodles out on a clean, flat surface (a cutting board or baking sheet lined with parchment) and mix the Fontina and mozzarella in a bowl. Take a heaping Tbsp of cottage cheese mixture and create a thin, even layer across the entire lasagna noodle. Sprinkle with cheese mix. Gently roll up the noodle from one end to the other. Place the roll-up seam side down in the prepared baking dish and repeat until all the lasagna noodles are filled.

Pour remaining tomato sauce over the tops of the lasagna roll-ups. Sprinkle with remaining Fontina and mozzarella mix.

Loosely cover the baking dish with aluminum foil, and bake for 15 minutes. Remove foil, then bake for another 10- 12 minutes, until cheese is melted and sauce is bubbling. Garnish with parsley if desired.

Who wants to spend 30 minutes using their Sunday to get ahead for the week by making these Blueberry and Cream Cheese Stuffed French Toast Rolls?

In a recent study, it was found one make ahead dish easily used for a breakfast or snacks eliminates 100 hour of crying and anxiety. That’s a lie. I just made up that study but you get the picture. 😉

You can make them in a skillet or air fryer. They also make a nice Mother’s Day brunch the kids can easily manage, so feel free to save the recipe below. Look at you planning ahead! In case no one told you yet today, you’re wonderful. 🌸🌸

Recipe:
16 slices sandwich bread
1 cup softened or whipped cream cheese
Blueberries
4 eggs
1/4 cup milk or heavy cream
1/4 teaspoon vanilla extract
Pinch of all spice
Pinch of salt
butter, for greasing the pan Confectionary sugar for dusting
1. Cut the crust from each slice of bread and flatten it with a rolling pin.
2. Place about 1-2 teaspoons of cream cheese 1 inch from one end of the bread in a strip. Add 3 berries to the top of the cream cheese. Roll the bread up tightly and repeat with the remaining pieces of bread.
3. In a shallow bowl whisk the eggs, milk, extract, allspice and salt until well combined.
4. Heat a large skillet set over medium heat and melt a tablespoon of butter.
5. Dip each bread roll in the egg mixture coating well and then place them in the pan seam side down. Cook in batches until golden brown, turning them to cook and brown on all sides, about 2 minutes per side. Add butter to the pan as needed.
6. Serve with a dusting of confectionary sugar and extra berries.
Air fryer method: Cook for 4 minutes.
