I just love all the seasonal fruits and veggies that are available throughout the summer. Zucchini is in season during the summer and I thought it was about time we highlighted some favourite zucchini recipes. It’s extremely versatile because it can be eaten raw in a salad, or in savory dishes and even sweet treats like cupcakes. I’ve been on a zucchini kick recently and can’t wait to try some of these recipes.

    Hi there, I’ve just come across your beautiful blog! Interestingly I posted last night too on courgette (I’m English!) recipes. They’re my Veg of the Month and as we grow our own we’ve been munching our way through nine plants worth for the last month and I’ve had to be more than a bit inventive.     Hi. I just tried making this, & think I must have done something wrong. While it smelled fabulous & tasted good, it was most definitely not saucy in any way. I kind of ended up with cheesy scrambled eggs & pasta. I was thinking it was supposed to be more like a carbonnara type of dish. Could I have had too much or not enough of something? Or maybe I was supposed to remove it from the heat before adding the egg mixture? Would too much Parmesan have done it? My egg mix seemed quite thick before adding it to the pan?
