A Quick Bite With…Eden Hertzog, founder of New Moon Kitchen

Cookie connoisseur Eden Hertzog spent 13 years raising her first baby, vegan bakery New Moon Kitchen, but has settled into life as a new mom. When she’s not tending to her new boo or making music (or traveling or writing—seriously!), she’s back in the kitchen, whipping up one of her much-loved cookies, like chocolate mint MoMints or the new spicy chocolate Lovebites. Everything is make with organic spelt flour and is trans fat, dairy, nut, egg *and* preservative-free. And they’re downright DEE-lish. While the new baby napped, Eden shared with us some of her favourite things to make, as well as the famous singer she’d love to host for dinner

Q: How did New Moon Kitchen come about?

A:When I was in high school I got a part-time job as a baker in a small
vegetarian cafe. I was vegan at the time, but still had my sweet tooth. My
boss was really great, and encouraged me to experiment – which I did a lot
of! I developed a bunch of original recipes, and when I finished school I
decided to try selling my baked goods to make some extra money.

Q: What’s your favourite thing to bake? And do you cook as well?

A: I love baking cookies. They are just so satisfying. And yes, I love to cook!

Q: What’s the one thing everyone needs to know about baking?

A: The tradition behind baking is about giving or sharing, and that’s where
the whole idea of love being a key ingredient comes in. It’s true – put
some love and dedication in the process and it’s bound to turn out.

Q: What’s your default, throw-together-and-wow-everyone meal?

A: Honestly, a roast chicken is so easy but for some reason presents really
well. That with some squash and green beans, maybe some quinoa too – yum!
I wish it was Thanksgiving every day.

Q: What’s the one thing you dream of baking in a “healthy gourmet” way but fear it’s
too complicated?

A: Pie crust. Hard to get around that one.

Q: If you could have any one person over for dinner (or baked goodies) who
would it be?
A: I wouldn’t mind having dinner with Stevie Wonder. He has been a constant
source of joy in my life and I’d love to make him some cookies.
