Roundup: Quickie Dinner Week

Many people are surprised that I opt for speed dinners on most weeknights.

But you’re a Food Blogger!” they say. Yes I am, but you see, there are nights where I enjoy creating an elaborate meal, but sometimes there is nothing better than knowing that dinner will be ready quickly and without much fuss. Now, as a “Food Blogger” and someone who generally has 12698 things to do on any given day, (don’t we all!) I’ve found that it’s important to have a few recipes up your sleeve that you can make in your sleep. These should be recipes that require little to no prep and are made with ingredients you always have on hand. The perfect formula for a speedy dinner.

This Chicken and Asparagus Salad is the perfect quickie dinner for Spring! You can easily pick up a rotisserie chicken from the grocery store and have this salad put together within minutes of walking in the door!

These Tilapia Fingers are kid-friendly and quick cooking. Definitely much better tasting and better for you than frozen fish sticks.

A quick pasta, like this Kale Pasta is a great dish for busy nights, and it comes together even faster by tossing the red pepper and onions in the food processor.

Ninety Second Gnocchi. Need I say more?

Shakshuka is a fun take on the classic Breakfast-For-Dinner, I love spicing this one up by adding a little chorizo. Yum!
