Roundup: Seasonal Veggies

Roundup: Seasonal Veggies

There are many reasons why I love Spring, the warmer weather and knowing that Summer is just around the corner make the top of the list, however, the next reason happens to be the wide variety of Spring vegetables available. It’s so exciting to see artichokes, asparagus and fiddle heads in the produce section at my grocery store, just knowing that I have something new to add to my rotation. As someone who enjoys being in the kitchen, using fresh, seasonal ingredients always lend themselves to the best flavors. I mean, do berries in the winter even compare to the sweet, juicy berries of July? While we still have a few months to go before we’re enjoying fresh blueberries and raspberries, we do have a lot of Spring veggies around!

Rhubarb is one of those ingredients that you don’t see outside of the Spring and Summer months. Why not make the best out of this seasonal favourite by enjoying this Strawberry Rhubarb Crostata.

This Chickpea and Spinach Stew is perfect for those rainy Spring days.

While I enjoy kale throughout the year, munching on this Kale Pesto Pizza is perfect for Spring.
