
Netflix & SPC: Cream Cheese and Veggie Sandwich
Here we are, people, it’s September. Are you ready? I pride myself on being pretty organized most of the time. But this year? Ay caramba, I’m a disaster. I’m scrambling to pull together the requisite backpacks, lunch boxes, thermoses, water bottles, etc, that my kids will need to start a new school year. And emotional preparation? Have I mentioned my baby starts school this year! Leaving the nest of our beloved daycare seems not to be phasing Julian at bit, but I am a wreck. I have way more anxieties about him going to school than I did with Esme. Or maybe time has just obscured them?
Will he make friends? Will he take to the French Immersion program the way his sister did? Will he eat a packed lunch?! One of the loveliest perks of the daycare we had one or both kids in for five years is the hot lunch they prepare on site every day. We’re talking curries, fish soups and stirfries. How is a plain old sandwich supposed to compete with that? With Esme, I’m in a groove. I know exactly what to make and how often to change things up. But maybe Julian won’t want the same things. I’m starting to have nightmares about creating two completely different lunches every day. I cannot go there.
So, I’m starting from scratch and thinking about entirely new lunches that neither of them has ever had. Like this cream cheese and veggie sandwich. It’s easy and flexible – you could really use whatever vegetables you’ve got. But I love the crunchy/smooth combination of avocado, cucumbers and carrots. It’s packed with vitamins, will fill them up and best of all, I think they’re both going to love it.
As for my anxieties, I think I need a little inspiration to help me. I’m looking forward to a Netflix movie night where I’m going to introduce Esme and Julian to The Karate Kid. Who doesn’t love an overcoming adversity story? And I do mean me… my adversity. Because my kids are just fine.
Ingredients
- (makes 2 sandwiches)
- 1 carrot, grated or slice
- 1/2 English cucumber, grated
- 1/2 avocado, sliced
- 1 teaspoon lemon juice
- 1/4 to 1/2 cup light cream cheese
- 4 slices of whole grain bread
Method
Begin by grating your carrot and grating or slicing cucumber into bowls.
Now halve your avocado.
Gently slice it in the shell and turn the slices out onto a plate.
Sprinkle the slices with lemon juice to keep them from browning
Now it's time to assemble.
Place four slices of bread down on a clean cutting board.
Load two with cream cheese to your desired thickness
Sprinkle your desired amount of carrot and cucumber over the cheese and gently press it into the bread using the back of a wooden spoon or your hand.
Arrange a few slices of avocado on the remaining two pieces of bread.
Pair up you avocado halves with the cheese halves and pack the sandwiches in airtight containers.
