When it comes to back to school, there is nothing more soul-crushing than having to make breakfast in between a million requests of “Can you please get dressed?!” (Ok, you’re right, busy dinner hours stink too.) School mornings just feel too hectic for even food. It’s why the best strategy for an easier morning is to have breakfast recipes that make themselves overnight while you sleep; just a few minutes before you go to bed is the way to save you time and stress in the morning. Plus it’s pretty amazing waking up to a house that smells like baked apple pie. How’s that for a good morning?!

Overnight Oat and Chia Pudding – You can mix this together so quickly at night, pop it into the fridge and have a delicious grab and go breakfast waiting for you in the morning. Well, leave time for some toppings. Toppings are the fun part!

Slow Cooker Apple Pie Oatmeal – We consider the slow cooker our best friend. (Dear real people who are our closest friends, so sorry!) since it does the cooking for us, and we love this warm, hearty and nutrition-packed hug of oats.

Breakfast that Make Themsleves

Ingredients

  • 1 1/4 cups steel cut oats
  • 4 cups almond milk, plus desired amount for morning
  • 2 cup water
  • 1 Tbsp ground flax
  • 1 Tbsp chia seeds
  • 1 tsp real vanilla extract
  • 1/4 tsp salt
  • 1/2 cup apple sauce
  • 1 cup sliced apples
  • 1 Tbsp honey
  • 1 Tbsp brown sugar
  • Toppings
  • sliced almonds
  • coconut
  • sliced banana
  • raspberries

Method

Add oats, almond milk, water, flax meal, chia seeds, vanilla extract, salt, apple sauce, apples, honey and brown sugar into your slow cooker. Give it all a stir.

Cover and cook on low for 7 hours.

In the morning, scoop oatmeal into bowls from slow cooker, pour in splash of almond milk and garnish with additional apples slices and cinnamon.

Slow Cooker Breakfast Rice Pudding – If you’re a rice pudding lover than why would you only eat it for dessert? This new breakfast favourite of ours isn’t as sweet as our end of day pudding but it’s as satisfying and definitely makes the grade on a busy morning.

Nonstick Cooking Spray
3 1/2 cups coconut milk beverage (or cow’s milk)
1 13.5 oz can of lite coconut milk
1/2 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
1 1/4 cups short grain brown rice
2 cinnamon sticks

Method

Toppings: shaved almonds, unsweetened shaved coconut, fresh berries, cinnamon

Spray your slow cooker with the cooking spray. Mix in the milk, coconut milk, 1 cup water, sugar, vanilla extra and salt. Stir in the rice and then drop in the two sticks of cinnamon. Cook on low for 7 hours.

In the morning, uncover, remove the cinnamon sticks and serve warm (or chilled as leftovers the next morning) with desired toppings.
