Baked Gnocchi Lasagna with Sausage

This is not your Nona’s lasagna but she won’t turn her nose up on this quick version of her afternoon long delight. Don’t worry, though. She’s not mad. She knows you need a one-pot meal on the table in 30 minutes.

Baked Gnocchi Lasagna with Sausage

This is not Nona's lasagna but she won't be upset because she knows you need a one-pot dinner that gets on the table in 30 minutes. She also knows pillowy gnocchi, sweet ricotta and gooey mozzarella make the best meals.

  • 3 Tbsp olive oil
  • 1/2 tsp tsp red pepper flakes
  • 4 large cloves garlic
  • 1 shallot, diced
  • 1/2 lb mild Italian sausage, cut into slices
  • 28 oz. can diced peeled tomatoes
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp oregano
  • 4 cups baby spinach
  • 1 1/2 cups ricotta cheese
  • 1 1/2 lbs. gnocchi
  • 8 oz. fresh mozzarella, cut into 1/4 inch slices
  • 1/2 cup grated parmesan cheese
  • fresh Basil for serving


  • Preheat oven to 400F. In a 12-inch oven-proof skillet over medium heat, warm your olive oil. Add red pepper flakes, garlic and shallot and saute for 2-3 minutes.
  • Add sausage slices and cook through and brown, about 5 minutes. 
  • Add tomatoes, salt, pepper, oregano and 1/2 cup water. Roughly break up the tomatoes with a spoon. Simmer on low for about 10 minutes until the the sauce thickens a bit. Remove from heat.
  • Add spinach, dollops of ricotta and gnocchi. Stir. Top with grated parmesan and mozzarella slices.
  • Bake for 15 minutes uncovered until bubbling. Serve with fresh basil if desired.
