Apricot Hempseed Sticky Bars
I’m always on the hunt for foods rich in Omega 3 and 6 as I don’t eat a lot of fish. Luckily, Scarlett enjoys salmon. However, I do not. When I found the recipe at Whole Foods for these bars, I immediately wanted to try them, not only for Scarlett but for myself. Hempseeds are loaded with omegas and are easy to toss onto salads. However, I can’t always get Scarlett to eat a salad plus this is a sweet way to enjoy them. I aslo thought they’d be a great addition to her lunch box.
Scarlett prepped this entire recipe and insisted on being the one to take the pictures. I guess she promoted herself. As she tossed all the ingredients into the processor, she told me everything smelled “so good.”
Ingredients
- 3 cups dried apricots, roughly chopped
- 1 cup dates, pitted and chopped
- 1 cup shelled hempseed
- 2 tablespoons lemon juice
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
Method
Line a 8x8 inch baking pan with parchment paper.
Roughly chop apricots and dates.
Combine all ingredients in a food processor. Mix until you have a sticky lump.
Flatten sticky lump into pan using the back of a spoon.
Place in refrigerator for two to three hours.
Cut into bars. Keep in a air tight container.
I have to admit. This wasn’t an instant hit. I think it was the sticky consistency, which surprised me because most sticky things are a kid pleaser. She loves dried apricots so I wasnt dicouraged. I just kept offering them. She eventually came around. I think it helped that she saw me enjoying them. Plus I offered one at that time of day just before dinner when they beg for something to eat and all you need is a few peaceful minutes to just finish dinner. Intense hunger must have helped because it all went down.
