
Coconut Icy
This is a really big day for us over here at Sweet Potato Chronicles. I. Mean. Big. When we started this site, our babies were, well, babies. We started cooking with our kids for a lot of different reasons. We wanted to teach them the the awesomeness of food but we also hoped to one day reap the proven benefits that come along with getting the kid’s involved in the kitchen. Plus, we got some pretty hilarious material for posts from our escapades in the kitchen together. But today is a major milestone for this family as well as the SPC site. My daughter Scarlett will debut her very first recipe and post. This simple but wildly yummy icy was her creation. She’s done lots of other recipes before. In fact, she created a mean spinach puree that has become a staple in our household, but this dish is all hers from inception and testing to photographing and actually building and writing the post. (Please pardon any misspelling and typos.)
Ladies and gentleman please welcome my daughter Scarlett and her very first post. (I’m having a very proud mommy moment right now.) I’ll hand it over to her and, if you need me, I’ll be having a cry over in the corner. Take it away my beautiful girl….
Hi everyone, I’m very excited to be writing this post today. I wanted to make this recipe because I spend a lot of time on the beach in Connecticut where my nana and grandpa live. On the beach, when it gets really hot, we like to go to the ice cream truck. When I was littler, I used to get ice cream sandwiches or a pink panda popsicles but now I like to get a snow cone. I love it because at the bottom it has a gumball. So it’s a treat in a treat. It’s one of my favorite memories–on the beach with a snow cone on a hot day.
I made this recipe because I wanted to make something similar at my cottage so I didn’t have to go all the way to Connecticut for my favorite snow cone. I like it so much because you can scrape it out of the cup and when it melts you can drink it too. The only thing I miss is the gumball on the bottom. I hope you like it.

Ingredients
- 1 cup ice cubes
- 1 cup coconut milk
- 1/4 cup shaved coconut
- 2 tablespoons honey
- juice of two limes
- zest of one lime
Method
In a blender, whiz the milk, coconut, honey, lime juice and zest.
Add the ice cubes, blend until the mixture is smooth, and pour it into paper cups.
Freeze the mixture for 2 hours. Serve, scrape and enjoy.
