Meal Plan for December 14

Okay, let’s just get straight to it, because if you’re like me you can barely breathe right now. Everybody has a lot going on right now but you’ve still got to eat. In fact, some healthy dinners are going to help things from getting too bananas in the next couple of weeks. This week’s meal plan is pretty genius, if I do say so myself. If you don’t like pulled pork you’re going to have to sit this one out (sorry!) because we’ve got a recipe that delivers three – count ’em, three! – dinners. We had dinner over at Laura’s while she was testing this little baby and I can attest to its brilliance. So, Monday morning you’re going to get the pork into the slow cooker and then you’re going to be set up – other than a bit of extra prep – for three nights.

You’ll start out with Pulled Pork Sandwiches on Monday night, use leftovers for a super easy Burrito Bowl on Tuesday night and slide into Wednesday with a quesadilla. Thursday and Friday both use mushrooms – a soup and an egg bake – so you don’t have to think about a lot of ingredients when you’re shopping.
