
Karine’s Kids are Eating in the Car Again
This is going to be a quick post because it’s late on a Friday night, and I am at a hotel with my daughter, Milla, and two of her friends, all of whom are already asleep. They are halfway through a weekend-long dance competition (had you told me when I signed Milla up for ballet 11 years ago at age three that I would end up being a dance mom, I know I would have laughed out loud…but I am one proud mama now). I had to leave the girls to fend for themselves for dinner in order to drive my youngest son, Beckett, to hockey camp. Thankfully, my sons Wyatt and Theo have a relatively quiet weekend, but as my four kids make the transition from winter sports to spring activities, I feel more like a chauffeur than a parent. And my vehicle has become a dining room on wheels.
So it only makes sense for me to search the SPC archives to find the best make-ahead recipes that also travel well. I’d love to hear your suggestions: Please tell me I am not the only one who struggles with healthy meals on-the-go?! And yes, I know, it’s not ideal to have my family eating meals on wheels, but sometimes a mom’s gotta do what a mom’s gotta do…!
