Unexpected Grilled Meals for Appetizer, Dinner and Dessert

It’s finally grilling season. Today on Global Morning Show we shared an entire evenings worth of dishes including appetizer, dinner and dessert completely prepared on your grill.

Grilled Guacamole

Ingredients
  

  • 3 ripe avocados
  • 1/2 small onion, grilled then finely diced
  • 1 jalapeno pepper, grilled, peeled, seeds removed and diced
  • 1 clove garlic, minced
  • 1 lime, juiced
  • 2 tbsps chopped fresh cilantro
  • 1/2 tsp salt
  • oil for grill and vegetables
  • 1 roma tomato, diced (optinal)

Instructions
 

  • Preheat your grill on medium high heat.
  • Slice avocados in half, remove pit.
  • Place avocados and onion cut side down on grill. Place jalapeno and whole garlic on the grill as well. Grill for 4 – 6 minutes until grill marks form.
  • Allow avocados and vegetables to cool and then dice the onion and press the garlic using a garlic press.
  • Add avocados to a mixing bowl.
  • Mash the avocados with a fork until desired texture. Add garlic and stir.
  • Add onion and jalapeno to the avocados. Stir to incorporate.
  • Stir in lime juice, cilantro and salt. Taste to check for seasoning.

Grilled Ricotta, Prosciutto Pizza with Baby Arugula

Ingredients
  

  • 1/4 cup olive oil, extra for the grill
  • 2 cloves garlic, minced
  • 1 ball store bought pizza dough
  • 1 cup ricotta cheese
  • 1 cup torn or shredded mozzarella
  • 5 -6 slices prosciutto
  • 2 cups baby arugula

Instructions
 

  • Preheat the grill to 500.
  • In a small jar, add oil and minced garlic. Set aside.
  • Stretch or roll your dough out on a lightly floured surface.
  • Brush one side of the dough with olive oil. Place oil side down on the grill.
  • Brush the top of the dough with a thin layer of olive oil. Let the dough cook for about 3 minutes, with the lid off, or 1 to 2 minutes with the lid on. Use tongs to check dough making sure it doesnr burn. You want grill marks on it and it should be just set.
  • Flip the dough over with the tongs. The dough should come up easily and flip without tearing. Brush a generous amount of garlic oil on the top.
  • Drop tablespoons full of ricotta across dough and arrange slices of prosciutto. Sprinkle with mozzarella cheese.
  • Close the lid and cook for 3 to 5 minutes. Check on the pizza mid way and move pizza to a cooler part of the grill or turn the heat down if the dough is starting to get too dark.
  • Using tongs, remove the pizza from the grill when edges are crisp and the cheese is melted. Let cool for 2 minutes and then add baby arugula to the top. Cut, serve and enjoy.

Grilled Banana Boats

Ingredients
  

  • 4 bananas

Fillings: chocolate chips, mini marshmallows, peanut butter, nutella, nuts, shredded coconut, blueberries, sprinkles, butterscotch chips, M&M, fresh sliced strawberries

    Instructions
     

    • Preheat grill to medium high.
    • Slice bananas lengthwise.
    • Pinch peel open to make room for fillings. Add fillings.
    • Gently squeeze banana closed. Tightly wrap with aluminium foil.
    • Place the bananas on the grill using tongs. Grill for 10 minutes until banana softens and toppings melt.
    • Using tongs, remove bananas from grill and allow to to sit for 2 minutes.
    • Gently unwrap bananas and enjoy.
