Apple Pancetta Bites

An apple a day makes your appetizer issues go away. This simple solution to a delicious but quick appetizer for your New Year’s Eve festivities is a great pairing to a decadent cheese platter or other richer appetizers. They’re also as equally comfortable in a room full of sweatpants or sequins.

Apple Pancetta Bites

This may be the prettiest and easiest appetizer there is for your New Year's Eve entertaining. The combination of sweet and savoury is delicious, and you won't feel bad about loading your plate up with this healthy nibble.

  • 2 pink lady or honey crisp apples, sliced into 1/4 inch slices
  • pancetta, thinly sliced
  • 1/2 cup crumbled goat cheese
  • honey
  • black pepper
  • fresh thyme


  • Preheat oven to 425.
  • Arrange pancetta slices in a single layer on a parchment lined baking sheet.
  • Bake pancetta for 8 to 10 minutes or until golden. Transfer to a paper towel-lined wire rack. Let stand 10 minutes or until crisp. (Do this step in advance for easy assembly before serving.)
  • Slice apples (dip in orange juice to keep from browning) and place on a serving platter. Add a slice of pancetta to each apple and then sprinkle with goat cheese. Drizzle with honey, a sprinkle of black pepper and fresh thyme. Serve.
