It will come as no surprise that Laura and I are fans of sweet potatoes. Our namesake veggie is a nutritional power house, with one cup containing more vitamin A than you need each day, 50% of daily required vitamin C, lots of the B vitamins as well as being rich in fibre. That’s all fantastic but we love how versatile they are. I was just at a luncheon hosted by the American Sweet Potato Marketing Institute and we had everything from a smoothie to a stew to a shortbread bar. It was all fantastic.
