S’more’s Pastry Pies

Makes: 8 puff pastry pies

2 sheets puff pastry, thawed

1/4 – 1/2  cup peanut butter

1/2 cup crushed graham cracker, about 5 sheets

1/2 cup dark chocolate chips

4 large marshmallows, cut in half

1 egg, beaten

Method

Preheat the oven to 375. Line a large baking sheet with parchment paper.

Unfold the puff pastry sheets. On one sheet spread the peanut butter leaving a 1/2-inch border all around. Sprinkle with graham cracker crumbs and chocolate chips over top of peanut butter. Cut the sheet with filling into 8 4×4 inch squares. Place a marshmallow half on top of the chocolate of each square. Now cut the second sheet into 8 4×4 squares. Place one on top of each with filling, crimp the edges with a fork and make a small slice in the top to vent. Place squares on prepared baking sheet and brush each with beaten egg.

Bake until puffed and golden brown, about 20 – 25 minutes and rotating the baking sheet halfway through the baking process. Serve warm.
